Where It Comes From Originally 

Speculation reigns over the true origins of ceviche. Although it is closely associated with Latin America, it has roots with the Inca, the Polynesians, and even the Moors of Northern Africa. Still, ceviche has become a favorite all over the world. In Peru, it has been named the national dish! This ceviche is a kicking blend of citrus and chili oil marinating some raw fish. Yams are also served on the side, almost like a different version of fish and chips. In Ecuador, this dish focuses on shrimp paired with corn instead. Finally, in Costa Rica, sea bass is marinated in a lime-vinegar baste, while in Mexico, it’s all about shrimp or tilapia with tortillas on the side.
