Grilling
Even though some spring days are still chilly, it’s hard to deny that grilling season is here. You don’t always have to set up the grill in your backyard, either. It’s easy enough to grill on the stove. Just be sure to keep an eye on the fillets as they cook, because it only takes a few minutes to get them to safe doneness. Brush with oil or nonstick cooking spray put it on the edge of the grill, and then check for color once some of the juices start to run out of the fish.
Poaching
Poaching is another healthier option. It’s gentle and helps keep the fish moist and juicy, no matter which type you are trying to cook. Use veggie stock, chicken stock, or a broth infused with herbs and spices. Get a pan big enough to lay the fish down flat and simmer in the liquid. Make sure that the liquid shimmers instead of bubbling; if it bubbles, then it’s too hot.
Steaming
Yes, you can steam fish. It’s gentle and produces mild-tasting fish that pairs well with a variety of sauces. Rub the pieces of fish down in spices, herbs, ginger, garlic, and chile peppers. Then grab a bamboo steamer or a foldable steamer basket if you don’t have a bamboo one. You’ll need about an inch and a half of water in the pot to steam the fish. Let it cook for about ten minutes, and then check how done it is.
Broiling
Broiling is a quick way to prepare a delicious seafood-based dinner when the weather outside is too nasty to fire up the grill. It’s similar to grilling, but you might want to include some foil in the broiler pan to help minimize the mess.
