First, Clean Them Up
Before you do anything else, make sure to clean them up a bit first. Getting your mussels from a reputable fishmonger is your best bet – the reason being that the mussels won’t be packed with grit and dirt.
Second, Add Awesome Aromatics
Aromatics make everything taste way better than without them. Take the time to saute chopped onion, garlic, and ginger. Lemongrass, chiles, and shallots will also kick it up a notch. Having a base for some scrumptious sauce will make the loaf of fresh crusty bread you’re about to make even yummier.
Third, Level Up with Some Liquid
The liquid element of this dish is also unforgettable. The mussels, even after their shells are cracked up, need to be cooked in a specific way – in this case, by steaming. Water is fine, but it’s a tad bland. Instead, spring for coconut milk, soy sauce, fish sauce, tomato juice, wine, or lager!
Fourth, Simmer It All Together
Now that it’s time to put the pot of mussels on the stove, you might be wondering what to do next. Bring everything to a boil – but don’t leave it that way! Instead, you’ve got to switch it down to a simmer. Rolling boils don’t work, as it’s too much for mussels. And in case you want to plunk them in a slow cooker, the low and slow technique won’t do either.
