To get you in the mood for delicious BBQ-glazed ribs, here’s a little info about the history of BBQ.

The History of BBQ

The first person to write about barbecue was the Spanish explorer Gonzalo Fernández de Oviedo y Valdés in 1526. Oviedo traveled throughout the Caribbean and what is now Florida. During his travels, he encountered the native Arawaks cooking meat by placing it on a rack above a fire. He called it “barbecoa”, which modern-day Taino descendants say is a mispronunciation of the word “barbicu”. Although this is the origin of the word “barbecue”, humans have been cooking meat over a fire pretty much since the beginning of time. Israeli scientists at the University of Haifa discovered in 2007 that early humans living in the area of Carmel 200,000 years ago were carefully selecting special cuts of meat to roast over a fire. Barbecue methods have changed several times as the cooking method was developed and perfected. Leonardo da Vinci even designed a turning spit with a built-in ventilation fan! Rotisseries went from hand-cranked to dog-powered to spring-loaded. It also became popular to own a smokehouse, and the barbecue became a popular social event. George Washington owned a smokehouse, and he often attended or hosted social events to barbecue meats. The first commercially produced barbecue sauce didn’t come until much later, around the turn of the 20th century. The Georgia Barbecue Sauce Company created the first commercial barbecue sauce, and in 1948 H.J. Heinz introduced the first nationally distributed barbecue sauce. Barbecue has a long history of meticulous perfection by many great minds!
