Taste
Maryland crabs have a specific taste to them that can’t be found anywhere else. While blue crabs travel up and down the east coast, all the way up into Nova Scotia, the ones found in the Chesapeake Bay are the sweetest. The reason has a lot to do with season. In warmer months, crabs are focused on storing fat so they can survive hibernation in the winter. This makes the meat taste better, and gives it a delicate feel. Some also say the water has something to do with it–giving locals another reason to protect the Bay.
Heritage
Blue crabs are tradition! That’s why many Marylanders are so drawn to them, when taste is taken out of the equation. It can be a family dining experience to sit down with a bushel of crabs and a few cold beers. The spice often paired with crabs, Old Bay, is also a Maryland favorite. It’s often placed alongside salt and pepper at restaurants, and people sprinkle it on just about anything. The sense of community is strong when it comes to crab picking, and so Marylanders have found a monopoly on it.
Flexibility
Crabs can be individually picked and eaten right away, of course, but there are many other recipes that use crab meat. Crab cakes, crab soup, surf and turf–all of these are particularly delicious when using lump crab meat. Cream of crab is a common soup served along the coast, but Maryland’s crab soup is a local favorite. Because it can be used in so many different ways, crab meat soars in popularity.
