Catering an event is about more than just providing food for guests. There are many factors that should be considered to create the perfect menu that will be memorable and delicious. Make sure you plan ahead and choose quality ingredients.
Type of Event
Gather as much information as you can about what your clients are looking for. What type of event are you catering and how many people do you need to feed? Is there a theme of the event that you can pull into your selection of food choices? Will there be courses or a cocktail hour? Gathering this information will help you make decisions about what direction you should go in.
Breakfast
Some corporate events will take place in the morning, or you may just come across a client that prefers breakfast food. This creates a great opportunity to come up with the perfect breakfast menu. Remember that breakfast calls for the perfect balance of savory and sweet options. Proteins and pastries are a great, well-balanced offering. Plan to serve five ounces of your entrée for each person, an average of two beverages per person, a choice of sides, and at least two pastries per person.
Lunch
There are many different directions that you could go in when preparing a lunch menu. Afternoon training sessions, seminars, and other conferences are typical event that would require lunchtime catering. Prepare up to four appetizers per person, a five-ounce entrée, up to three sides per plate, and up to two beverages per person.
Dinner
An elegant party, wedding reception, or birthday party are all occasions that would call for dinner catering. These events usually require more food than lunch or breakfast event and sometimes use more expensive ingredients like seafood and crabs. Plan to up to five appetizers for each guest, a soup or salad course, seven ounces of your entrée, up to three sides and beverages per person, and two servings of dessert per guest.
