Plenty of Crab
Is it possible to have too much crab inside of a crab cake? The answer is absolutely not! A good crab cake should have ample amounts of crab! As the name would suggest, crab is the central component. You need to have a good balance between the amount of crab and bread crumbs. All too often, restaurants will use too much bread crumb and ruin the crab cake. You won’t receive good results if you are cheap with the amount of crab you use in them. Costas Inn’s crab cakes are always made with substantial amounts of crab. Seasoning
A crab cake requires a good amount of seasoning. We at Costas Inn use our very own spice blend for our crab cakes. Crab is delicious on its own; however, with the proper seasoning, it can be taken to the next level. With that said, seasoning is is an absolute must for crab cakes!
How To Shape and Handle
Crab Cakes need to be shaped into balls. Many people make the mistake of shaping them into flat discs. Also, a crab cake should be formed rather loosely. You want them to be delicate after they are cooked. You also do not want to use too much binder because it will take away from the amazing flavor of the crab.
