What’s So Special About Maryland Blue Crabs?
Although we are probably all most familiar with Maryland blue crabs, this is not the only state where blue crabs are found. In fact, they can be found from Nova Scotia all the way down to Uruguay! But many connoisseurs consider Maryland blue crabs to be superior to all other varieties thanks to their delicate texture and buttery taste. Turns out that these features are thanks to their upbringing in Maryland waters.
Thanks to our 4 distinctive seasons, Maryland blue crabs have to hibernate over the winter which allows them to build up fat reserves. These fat reserves, also known as the “mustard,” give their crab meat a delicious depth of flavor that you simply won’t find in any other types of crabs. You can even tell a Maryland blue crab from other blue crabs by looking at the mustard: Maryland crabs feature mustard that is a much darker shade of yellow than other blue crab varieties.
While some prefer Dungeness crabs from the West Coast thanks to the fact that they are larger and therefor easier to eat, true crab lovers know that Maryland blue crabs are far superior in flavor which makes the work of picking through them completely worth it. Roughly half of the total US blue crab harvest comes from Maryland so we are lucky to be able to enjoy the freshest, most delicious crabs that came from our own waters.
