Basics & Components
The modern crab cake is made of many components – the most important of those being crab meat. The other standard components usually include breadcrumbs, various seasonings, eggs and milk. Those ingredients are combined into small cakes that are then cooked. Most crab cakes (including Costas Inn’s Maryland crab cakes) use blue crab from the Chesapeake Bay, but some crab cakes are made with other types of crab such as the Dungeness crab.
Large crab cake is the preferred main ingredient because the higher quality the meat, the better the crab cake will be. The eggs used in crab cakes help to hold all of the ingredients together and this lets the cake itself be shaped in a certain way. The starch element is usually the breadcrumbs and besides using the eggs as a moistening agent, milk, cream, broth or mayonnaise. The final component, the seasoning, varies greatly from recipe to recipe and is generally thought to make or break a crab cake. The Making of the Crab Cake
After all the ingredients are combined, the crab cakes are formed into circles sometimes as small as a cookie and sometimes as large as a hamburger. They can be coated in bread crumbs and/or flour to add crunch to the crab cake and also to help safeguard it as it cooks in the pan. Pan-frying, grilling and baking are all legitimate ways to cook the crab cake. The hamburger-sized cakes (sometimes referred to as a “crabburger”) can sometimes be served on buns as a sandwich (or, again, a “crabburger”).
