At Costas Inn, we pride ourselves on our menu offerings. No matter what we (and you) bring to the table, Costas is your seafood destination. It’s been this way for fifty years, and even though times may have changed, our unmatched customer service hasn’t! Say you’ve been looking for something a little different for dinner tonight – treat yourself to some magnificent mussels!
The Ground Rules of Grilling
Summer is the season of the grill! Even though it’s easy to assume that all you can grill is meat and veggies, seafood is just as tasty! Mussels are incredibly easy to prepare this way, and you can create an Instagram-worthy plating presentation once they’re done. Set up mussels and white wine as a light refreshment while the other courses are still cooking. Our in-house bowl of mussels, for instance, comes with garlic butter and parmesan breadsticks. Doesn’t that sound simply divine? We definitely think so.
Pump Up Your Preparation Game
Don’t be afraid to make several batches. Everyone will be clamoring (ha) for more! The quantity will depend on the size of your crowd. The size of each mussel determines how large each pound is.
While the mussels themselves are cooking, keep a close eye on them. They won’t take long – once they pop open on their own, you’ll know that they’re ready to eat. Test different levels of doneness to see which one you like best!
As strange as it sounds, you’ll notice some “hairs.” if you do see them, grab some pliers and yank them off. They’re not exactly the most appetizing and are inedible anyway.
Kick Things Up a Notch
Take a page out of our playbook and prepare a heavenly garlic butter sauce. Four ounces of butter and two cloves of garlic should be enough, but we won’t blame you if you want to measure with your heart! Alternatively, you could bring the heat with some hot chili oil or chili flakes as soon as you are done using the grill. Oh yes – keep things simple, fresh, and delicate with a skillful zest of lemon juice, parsley, and cilantro.
