When preparing crab dishes, various grades of crab meat are available. Knowing the difference between the grades can be helpful in certain instances. Below are the different grades of crab meat.
Special Grade Crab Meat
Special-grade meat consists of small pieces of white meat found in the body cavity of blue crabs. Food experts consider this meat the most versatile of all crab meats. It can be paired with various dishes, such as salads, soups, omelets, and quesadillas.
Claw Meat
Crab claw meat comes from the swimming fins and claws of the crab. The claw is one of the most active muscles in the crab’s body, and its core has a distinctive crab flavor. This area also has a high concentration of dark meat.
Backfin Crab Meat
This meat is a combination of crab meat and lump crab meat. Even though it has a different texture than lump meat, the backfin still has a flavor that rivals other types of crab meat.
Lumped Crab Meat
This meat combines two types of crab meat – jumbo lump crab and special-grade crab meat. Lump meat is usually white and tastes excellent in seafood salads. It is the main ingredient in traditional crab dishes and pairs well with appetizers like crab Rangoon and crab bisque.
Jumbo Lump Crab
This style is undoubtedly the most popular and fulfilling among seafood lovers, leaving no room for debate. In addition to its taste, its visual appeal also makes it a favorite. Jumbo lump crab is a versatile ingredient that we use in our very own crab cakes. Jumbo lump crab is also used for crab cake sandwiches as well. Although it is the most expensive, this particular grade of meat is also of the highest quality, ensuring your satisfaction with your purchase.
